As far as I know, it's papaya and pineapple that have the means to break down meat proteins.





Papaya is rich in an enzyme called papain, a protease which is useful in tenderizing meat and other proteins.





Pineapple contains a proteolytic enzyme bromelain, which digests food by breaking down protein. Pineapple juice can thus be used as a marinade and tenderizer for meat.
